Anyone making stock with the leftover Turkey Bones???
If so, please post your recipe. I want to do this for the first time tomorrow (Friday.)

I didn't cook the turkey - but I make stock ALL the time.
I put the carcass in a stockpot (bones and cartilege after picking out any good meat for my soup or casserole) and cover with water. If you have reserved the giblets, heart and neck you can put them in the stock pot too. I add chicken boullion paste (about 1 rounded Tablespoon). Add 2 quartered onions, 3 broken up carrots and 3-4 broken stalks of celery - leaves included. I strip the leaves off of 3 sprigs of thyme and dump them in with one full sprig. Strip 2 small stalks of rosemary and use those leaves, 1 fresh bay leaf, a palmful of poultry seasoning, a sprinkle of herbes de Provence and a good amount of pepper.
Bring to a boil and then reduce heat and let simmer for an hour or 2. You can let it go longer - but keep an eye out to make sure it doesn't boil down too much. I let it boil down by about a quarter for a nice rich stock.
Once it has boiled down, strain the veggies and carcus out of the broth and use the stock for soup!
The boullion acts as my salt so I don't add any more unless the simmered down result calls for a little extra.

Kathie Lee Joel was on one of the morning shows this morning making a stew out of the carcas
She made a rue with equal parts butter and flour, then added chopped onion, celery and green pepper. She put the carcass in and added 10 cups of water and 3 boulion cubes. Then simmer for 2-3 hours. She romoved the carcas. Then she added cooked sausage and all the leftover turkey pieces. It came out like a stew.
I dont remember which channel it was but I'l do a search
