open face tuna melt...

bagel or 2 slices of bread.
1 can tuna
2 slices munster cheese

toast bagel then when ready add some tuna and munster on top of each. Throw back in the toaster a few more minutes till cheese starts to melt

Eggplant sandwich

1 small eggplant, halved and sliced
1 tablespoon olive oil, or as needed
1/4 cup mayonnaise
2 cloves garlic, minced
2 (6 inch) French sandwich rolls
1 small tomato, sliced
1/2 cup crumbled feta cheese
1/4 cup chopped fresh basil leaves


Preheat Brush eggplant slices with olive oil, and place them on a baking sheet or broiling pan. Place the pan about 6 inches from the heat source. Cook under the broiler for 10 minutes, or until tender and toasted.
Split the French rolls lengthwise, and toast. In a cup or small bowl, stir together the mayonnaise and garlic. Spread this mixture on the toasted bread. Fill the rolls with eggplant slices, tomato, feta cheese and basil leaves

Melt in your Mouth Veggie Sandwich

4 slices whole wheat bread, toasted
1/2 (8 ounce) package cream cheese, room temperature
1 medium tomato, sliced
1 (5 ounce) package alfalfa sprouts
1 cup shredded mozzarella cheese


Preheat the oven to 350 degrees F
Line a cookie sheet with aluminum foil. Spread cream cheese onto each slice of bread, and set cheese side up on the cookie sheet. Place the tomato slices over the cream cheese. Top with alfalfa sprouts, then a generous sprinkle of mozzarella cheese.
Bake for about 10 minutes in the preheated oven, until the cheese is melted, and sandwiches are warm.

Bacon Cheese Asparagus sandwich

Makes 4

8 slices bacon
1 (10 ounce) can asparagus tips, drained ( I sue steamed fresh sometimes)
4 thick slices sourdough bread, lightly toasted
4 slices sharp Cheddar cheese


Adjust oven rack to upper position, and set oven to broil. You may also use a toaster oven to cook the sandwiches if you don't want to broil them in the oven.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown and crispy. Drain on paper towels.
Place a few spears of asparagus on a slice of bread. Top with 2 slices crisp bacon then a slice of cheese.
Toast under the broiler until the cheese is melted and bubbly

Waldorf Turkey Sandwich

Makes 4

127 calories a sandwich

1 1/4 cups cubed cooked turkey breast
1 small apple, chopped
1/4 cup finely chopped celery
3 tablespoons fat-free mayonnaise
2 tablespoons fat-free plain yogurt
2 tablespoons chopped walnuts
1 tablespoon raisins
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
8 slices cinnamon-raisin bread, toasted
4 lettuce leaves


In a bowl, combine the first nine ingredients. Cover and refrigerate for 1 hour. Spoon 3/4 cup turkey mixture onto four slices of bread; top with a lettuce leaf and remaining bread.

Cajun Chicken Club

INGREDIENTS
4 boneless, skinless chicken breast halves
1/2 teaspoon Cajun seasoning
1 tablespoon vegetable oil
4 slices Swiss cheese
1/4 cup creamy Parmesan salad dressing
4 sandwich rolls, split and toasted
8 slices tomato
8 bacon strips, cooked



DIRECTIONS
Flatten the chicken to 3/8-in. thickness; sprinkle with Cajun seasoning.
In a skillet, cook chicken in oil for 5 minutes on each side or until juices run clear. Place cheese over chicken. Remove from the heat; cover and let stand for 1 minute or until cheese begins to melt.
Spread dressing over both halves of rolls. Layer bottom halves with two slices of tomato, chicken and two strips of bacon; replace tops.
