probably on a nice night out with DH- maybe get a room in the city, go to a nice dinner, a show...
or, maybe combine the money and go away someplace for a weekend...

and get a massage and facial.

I'd be tempted to go for a new camera lense or perhaps pool it with DH for a mini vacation, or maybe a new refrigerator.

I would save it until I needed something 
But if I had to have some fun I would go shopping and replenish my undergarment wardrobe with a few good bras, underwear, and maybe a coat.

off the top of my head the first things that come to mind are:
coach bag
tons of clothes
nice dinner out w/ DH (along w/ something else like maybe show tix or concert tix)
designer sunglasses
spa day!
