I used to just put an apostrophe at the end of James. I was then taught to add s if you hear the "es" sound at the end. The possessive of James would sound like, "JamesES" so add the s after the apostrophe (James's). Now I'm trying to think of an example when you wouldn't hear, "ES".

Nope. Charles's is correct.
The only names that get only s' are Biblical names like Moses and Jesus.

Jesus and Moses are the exceptions to this.
It would be Jesus' words, not Jesus's words. (Unless you are talking about someone named Jesus and not the Biblical figure Jesus)
