Too much soup!
I made minestrone today and the threw in some whole grain pasta elbows. As the soup was cooking I opened the top of the pot and wow - those elbows really expanded! So I added more liquid, chicken stock, etc...
Here's the big question. Can I freeze this soup? Do noodles freeze well?
I made so much I have 2 huge ziplocs full of soup! Please tell me I can freeze it???

you can freeze it but the noodles may get really mushy when you defrost it.
I always make my pasta/noodles/rice sperately and put some n a bowl and put the soup over it. That way I can freeze the soup without it getting mushy. I just defrost the soup and then make more past or noodles

That is so smart! Next time that's what I'll do... How much Minestrone can I eat??!
I knew that freezing the pasta wouldn't be good on the defrosting side...

you can leave the soup in the refrigerator....it will not go bad....I keep soup in the refigerator for up to 2 weeks....
