for very basic needs as you said, any laptop brand will do. Cheapier solution is an entry level Windows based product such as dell, hp, etc...
Avg cost these days is about 550 for the basics..

a new HP- Came with Vista, which I'm not crazy about but it has yet to have a serious bug and I've had it since March.. I believe it was in the $800 range..

I have a Compaq Presario, liked it so much I just got DH one. If she likes pics and has a digital camera make sure it has a memory card port, that will come in handy, makes it easy to get your pics. And make sure it has a decent amount of memory.

Sony Vaio- A little pricy but great if you can get it on sale! (I did)
ETA: My last one was a Dell- I would reccomend that also.
