Would you ask your boss..
.. to write a recommendation letter for you if you were applying to graduate school?
i think he could write a great letter for me, but i'm not sure if it's acceptable to tell him that i'm even applying. we have mostly a business relationship.
thoughts?

I most definitely would.
I think most employers appreciate employees going back to school as long as it doesn't interfere.

Absolutely, particularly if the program was related to the work I do now.
It may occur to him that you will leave, but you are only applying now, not making the decision to leave or not. Cross that bridge when you get to it.

I am not sure if I would ask him. It's not that I think it's a rude request, but like you said, you are telling him you are quitting. I am not sure when you are starting school, but if it's not going to be until next fall, then you may potentially be out of a job a lot sooner than that. If you are starting in January, then I don't think it's so bad. Also, if you have any doubts about either being accepted into the program or whether you will go if you are accepted, then I wouldn't ask him. This is JMHO

Does your boss need to know it is a full-time program to write the recommendation? Is the program somehow related to your current job?
I'm facing this dilemma because I'm considering getting a Master's degree in field outside of my current job. I don't think I'll ask my immediate boss for a recommendation, but I know I can get an excellent one from her boss, so that may be the route I go.

Absolutely! Especially if your boss is fond of your work and will give a great recommendation...it will go far!
