why do we all feel the need to justify our posts with this? I know I have done it about a bazillion times. But how come, when we don't agree with another poster that we feel the need to justify our own post with one of the above?

It smooths things over.
Sometimes when we post, things read a certain way to others, but sounded completely different in our heads. Adding "JMO" or similar at the end is kind of like adding a shrug at the end of a statement...makes it easier to swallow.

I agree. Sometimes I feel like it will make it seem less harsh if I say JMO so that it seems like I'm the only nut who thinks this way.

I do it so that it doesn't seem like you are trying to change the poster's mind. Like if they say "we are going to the beach with my 2 week old" I would respond, "JMHO that 2 weeks is way too young and I personally wouldn't do it."
To me it sounds nicer than saying "2 weeks is too young and you shouldn't do that." 
It's like a disclaimer that you don't want to hurt their feelings

I agree in both ways..
It's like when we were young and said "No offense, but...."
You still say what you have to say but don't WANT the other person to get offended. They will probably get offended anyway, but it's a little disclaimer before we open our mouth

i, too, agree with this take on it.
the written word and the tone in your voice (and body language) are very different. "jmo" helps bring the non-verbal nuances across in the post.
i sometimes use the phrase, "my $.02" for the same affect.
