I did - and broke it down by room - this way I knew I had x boxes for each specific room and so if that room didn't have all the boxes I knew which ones were missing (this way you also know if there is an extra box in another room).
My list looked like for i.e.: Living room - 6 boxes couch tv end table (2) etc.
Makes it very easy to determine what and how much is missing IF anything happens.

We just counted the boxes. We had 21 boxes when we left and 21 when we arrived at our new home. Everything worked out great!
ETA: We also labeled each box like "Kitchen-Glasses" or "Living Room - Misc" but we did not have any master list. It sounds like it would be a great idea.

We were moving between NY and MI and MI and NY and although they claimed the furniture wouldn't be moved off the truck they did it anyway for two days.
If you are doing a local move I wouldn't worry so much about the detailed list as the chance of their losing a box is not good.
