Freezing entrees
In an attempt to save time and money, we purchased a food saver. This summer, I want to pre-make some dinners for during the school year. If I want to freeze whole trays of assembled casseroles, etc., do I cook them first, then cool and freeze, or do I just assemble and then freeze? I'm specifically thinking of things that contain already-cooked ingredients like baked ziti, eggplant parm, chicken enchiladas using cooked shredded chicken, etc.
Any advice would be appreciated!

From personal experience, I would cook Baked Ziti & Eggplant Parmigiana first, then freeze. I do not like how they taste when they are frozen uncooked.

DH frequently makes lasagna and if he makes an extra tray, we always freeze it before cooking it. Comes out great.

I guess either way works. I always cook first. I let it cool, then refrigerate overnight. They next morning it's easy to get nice clean slices to put in the bags. Then when it's time to eat, I pull out a bags and defrost overnight. Then just reheat in the microwave and toss the bag.
The issue with doing a whole 9×13 casserole is that it won't fit in the foodsaver bags.

I cook first then freeze in serving size. Baked ziti freezes really well.
