i hope i buttered you up for the help i'm about to ask for.
i'm searching high and low for a carrot cake recipe that i found online... by the looks of my facebook feed, i made this cake back in 2012.
since then, i've changed computers a couple of times and it seems i never saved the info  .
this is what i remember...
in the description of the cake, the author writes about visiting canada and discovering the best sugar and buttermilk out there. she goes on to say that "regular" buttermilk will be fine and if you don't have buttermilk, put some vinegar in milk and let it sit for 15 minutes.
she also says that if you can't find the amazing canadian sugar, that brown sugar will do.
the recipe has a lot of oil in it, crushed walnuts, and drained crushed canned pineapple.
it makes a very dense, very rich, very yummy cake. so much so, that it does NOT need frosting.

Hahaha...how about instead...play some Pearl Jam while you're whipping up the cake?
