question about giving notice
are holidays counted towards your notice? or do you have to give an extra day?

Technically you don't HAVE to give any notice (just as the company doesn't have to give you "notice" to fire you). Yes, it's the right thing to do and you don't want to burn any bridge, but if a holiday falls within your 2 week notice, I don't think that would change anything about the day you give notice

The moment you give notice the company can escort you from their premises. Giving notice is kind to do, but unless you have a specific contract that determines your conduct for giving notice, you don't have to work on a holiday.

I didn't phrase it correctly.
If I give 2 weeks notice, and a holiday falls in that 2 weeks, would I have to add a day of work to the end of the 2 weeks to satisfy "giving 2 weeks notice"?

No. The holiday is part of the notice. You wouldn't need to add a day to make up for it.

Check your companies employee handbook. In some organizations the amount of notice you give may effect the payment of unused vacation time.

question about giving notice
When I gave two weeks notice I just so happened have have already scheduled two days off. I asked the manager if they wanted me to make up those days and they said it wasn't a problen.

No, it's 2 calendar weeks. Not 10 business days notice.

I don't know what the technical answer is, its open to interpretation by HR and what the employee manual says with regard to giving notice and your vacation payout.
assuming you haven't given notice yet, why is it a question? just give the 2 weeks and 1 day notice and be done with it, knowing they can't deny the payment.
