What should we do re: house repairs (not necessarily home board related)
Our kitchen flooded on September 1. Insurance appraiser came that weekend and assessed. The insurance company authorized all repairs and recommended a company they usually deal with to do the repairs. The repairs included removing and replacing the hardwood floors in the kitchen (which meant removing the kitchen cabinets, appliances and all furniture in the room- open layout so dining furniture and living room furniture), refinishing the remaining hardwood to match, and since the water ended up leaking downstairs, my finished basement floor had to be replaced. Since they were gutting the kitchen anyway, we asked if they would be able to replace the backsplash and we would add that cost in ourselves and pay for materials. They said no problem.
Work began 10/6 and we moved into a hotel while they did work. Things started going wrong almost immediately. We came home to get something and noticed that there was damage to a cabinet they removed. That resulted in all new cabinets which added 3 weeks to the work. Then they broke our granite so then that had to be replaced.
We were finally able to move back home in mid November but they still hadn't finished. The new cabinets were slightly smaller so there was a gap where the cabinet ended and the paint beganso they needed to either paint or put an edge. There were gaps in the backsplash that required grouting. Two lower cabinets were missing shelves. Then the replacement floor in the basement started coming up. The company would send someone to the house to fix these issues but when they would arrive, they never knew what they were at the house to do. When we would tell them, they would say that they couldn't do it because they didn't have a supply or a tool or enough manpower. The last time they were here (maybe December?) they fixed one cabinet gap (there are 3), grouted one side of the kitchen but not the other, and put one shelf. We got tired of calling them and then not finishing the job. We've already complained to the insurance company that the people they recommended were awful and that they should no longer recommend them.
Life obviously got in the way but there has been contact between us and the company since January and the kitchen is still not completely finished. It's minor work to be done that we can easily hire someone else to do. This whole job was supposed to take 3 weeks and even if you add the issues that arose like the cabinets and granite breaking, we still should have been finished with everything by the beginning of December at the latest. We still owe them a decent amount of money but I feel like we shouldn't pay for work that was never completed. We refused to sign the completion papers.
What would you do if you were us?
Sorry this got so long.
ETA: the company the insurance company recommended farms out the work to random contractors. They're kind of a middle man.

What does your insurance company say? If they're the ones paying for the work to be done (which is what i'm assuming is the case), then they should be consulted.
Do you have the option to hire someone else and send the bill to the insurance company?

The insurance company gave us the money a long time ago so it's just sitting in our account. The contractor gave an estimate, the insurance ok'ed and then issued checks. Some were just to us to cash and then disperse. Others were larger amounts so they were made out to us and the contractor. They were given a portion up front, then throughout the repair, and the rest after it was finished. We still have one check they need to endorse and then money we deposited.
