NEED IMMEDIATE HELP/OPINIONS

i'm in CA and it's about 645am. i'm about to start prepping dinner for tonight's dinner party/birthday party for SO.

i WAS making sure that everything for dinner is gluten free because his DIL can't have gluten (VERY SENSITIVE).

i was opening the package of Jiffy brand cornbread mix, when i realized it has wheat flour.

the menu is like a thanksgiving dinner (SO's request since we were camping on Thanksgiving.

* ham and turkey
* mashed potatoes
* green bean casserole
* glazed carrots
* gravy
* cranberry sauce
* biscuits
* corn bread stuffing

everything was planned with gluten free ingredients. but i just found out that the cornbread won't be gluten free.

so here's the question:

if you were the DIL, would you be ok with the stuffing NOT being gluten free?
or should i run to the store and buy cornmeal to make the cornbread from scratch?

thanks.

If i had a serious sensitivity to it, I wouldn't eat it... I would imagine in the gluten free section at your grocery store there would be a GF cornbread package. I would be very surprised if there wasn't.

I'm vegetarian, so as someone with a specific diet, I can tell you that I never expect everything on the table at someone else's house to fit my needs. It would be nice for you to run out to the store, yes...but totally not necessary! It looks like everything else on the menu is stuff she can eat and I am sure she will very much appreciate that!

thanks!!!

i understand that she's not expecting it, but when she comes over, i want to make sure that she feels comfortable.

it broke my heart when she shared the story that her immediate family makes fun of her and tell her to figure it out for herself.

ok. so i will forge ahead and make sure the stuffing is kept away from other items so as to not cross-contaminate.

thanks again for putting me at ease.

yes, i'm a pleaser

I think you are more than fine with what you have. She has options. You could always just explain to her you didn't realize until it was too late. I am sure she will be more than greatful for all the effort you put into it!

I think it's plenty that you made sure the rest of the meal is safe for her to eat. I'm sure she'll appreciate that and have more than enough to choose from to eat.

I think it's fine as long as you aren't stuffing the turkey with it and keep it away from everything else. Maybe give her the option top make her plate first before any crumbs get flying. Dh can't have gluten at all so he wouldn't eat the turkey if it was stuffed and I brought him a full dinner on thanksgiving bc the thought of a buffet and cross contamination would have freaked him out. I'm sure she'll be very appreciative of the effort you've gone to.

i never stuff the bird.

thanks for the idea of having her serve herself first.

i'm planning to put everything on the table EXCEPT the stuffing. i will leave that in the kitchen to make sure there's no cross-contamination.

awesome.
thanks everyone for helping me make sure there are no problems for her.

I think it's awesome that you are concerned. Many people wouldn't go through the trouble for just one person!!!! I think having the stuffing gluten won't be a big deal. I think she will be impressed you were so co corned and aware of everything.
