Kid-friendly too hot for the oven meals

What are your favorite meals for your family when it's just too hot to turn on the oven?

Pre-kids, we'd just eat big salads or something but it's of course a little more complicated when kids come into play.

Last night we had crockpot beef with broccoli over white rice.

The other night be did BBQ chicken drumsticks.

Would love some other fun, kid-friendly ideas!

any kind of pasta where you just use the stove top is always good, plus mac n cheese (sneak in some veggies too!)

mac and cheese and grilled cheese or like pp said any type of pasta cooked on top of stove.

Breaded grilled chicken cutlets or pork chops.
Homemade pizza on the grill
You could grill or poach some chicken breasts and use those for lots of dishes. BBQ chicken pizza, chicken quesadillas, burritos, wraps, throw in mac and cheese.
Italian sausage either grilled or parboiled and then browned in a skillet.
BLTs
Cold bean salads, quinoa or pasta salads make great filling sides.
Sauteed shrimp with veggies and lemon juice over rice.
Chicken gyros on the grill with pita, tzaziki and greek salad
Grilled bruschetta chicken
You could do all kinds of kabobs. You could make some with mainly meat and have the kids put some together with veggies and pineapple to get them involved.
You could also get creative with grilling foil pouches. Make a pouch and have the kids put some veggies in the bottom, add whatever meat you want and they can help season and fold them up.
