Look for low growing shrubs. I put a row of mounding evergreen shrubs in front and they are carefree. I watered them the first year, but not since. I wound a soaker hose around and through them and left it on overnight on low a few days a week until they got established. I put mulch over the hose so it didn't show.
For some color, try Catmint, which deer don't eat. It comes in different heights, so read labels. It's dusty green and grows lovely long spikes of lavender flowers. The woman across from me has a row of them in front of her house with mulch all around.

Hosta do well anywhere. Some will even give you a little bit of purple flowering.

Hostas are shade/part shade plants. They do not like full sun. Try coral bells, perennial grasses, hydrangea and butterfly bushes.
