DS is almost 3. should i continue with organic milk still? he's at 1% now and at 3 im gonna switch him to skim.

That's really a personal decision. I assume there was a reason you started buying organic milk--are those reasons still important to you? If so, then continue. If not, switch to conventional!

I'm guessing you choose organic to keep him from the ingesting the hormones, antibiotics and pesticides in regular milk? If so, I can't see the benefit in stopping the organic milk. You can buy it in bulk, for a good price, at BJ.s.

My family has been drinking grass fed organic milk for over 10 years. First reason taste, second nutrition, third toxins to our bodies and to environment.
