Taco baked potatoes.
Basically I put taco meat and all the fixin's cheese, sour cream, jalapenos etc. on top of a baked potato instead of using taco shells

We are having whole wheat pasta with my mom's home made tomato meat sauce (she makes it and freezes it for us in quart size bags perfect amount for DH and I). I am so excited it is one of my favorite meals.

Breaded chicken cutlets, steamed broccoli, and left over salads from superbowl party (macaroni salad, potato salad, cole slaw).

Don't know if this will help but. .
a casserole of whole wheat pasta, eggplant, spinach, ricotta and veggie meat balls. . TONS of spinach and eggplant and low on pasta per doc's orders!

A little late but quinoa with black beans, yellow squash, zucchini, tomatoes, broccoli and chicken with a lemon vinaigrette.

I made homemade pizza. I had leftover sauce. I put pepperoni on DHs, because he always complains that I don't give him cured meats anymore.

And now for dessert I am enjoying homemade choc chip cookies
Well, sort of homemade. I bought the dough and put it in the oven  All the other steps just seems like too much work.

Thanks - it turned out pretty well. . mostly I just make up my recipes from what is in the fridge but this is more or less what I did. .
cut an eggplant in slices - salted it a let it sit for a bit - then sprayed it with cooking spray and baked it until soft at about 350. . when it was done just cut it up into pieces
boiled a little whole wheat pasta until al dente
defrosted bag 1/2 of spinach
mixed cup or little less of fat free ricotta, one egg, basil and oregano and pepper and low fat mozzarella (just a few ounces)
put it all in a baking dish with a jar of sauce, little garlic powder and a few veggie meatballs crumbled. .
baked it for about 25 minutes covered in foil. .

i took out some sausage to make some pasta and sauce with sausage crumb but i was so tired when i got home that i will make that tomorrow and me and DH ate cereal for dinner. LOL
