For those who grow herbs this time of year
What do you do with them? I've got basil, thyme and mint that needs to be picked. They are overpowering the pot.
How do I preserve them until I need them or for into the seasons when I can't grow fresh herbs?
I do plan to make Pesto but I'm not sure I have enough for a batch yet.

You can freeze the basil & mint.. seperate them into portions before you freeze. Not sure about the thyme though.

i saw martha stewart sprigged (?) the mint and put it in a pretty bowl in the bathroom for aroma...

Freeze
Dry
Infuse with oil (highly recommend if you buy a HUGE amount of olive oil, then get tiny jars)
