I followed Jennifer Seinfeld's lead (Deceptively Delicious) and began adding veggie purees to almost everything I cook...its easy to "hide" veggies in things that have sauces on them because the color and taste can be easily hidden by the other ingredients. I also started putting fruit and veggie purees in some of my baked goods too and they make them very moist!

For lunch Rylan had Morning Star Chik N Nuggets and steamed carrots...not homemade but somewhat on the healthy side.

Last night I made omlettes...I fill them with spinach, zucchini, onions, tomato and broccoli. Everyone in the house loves them.
The other day, I made chicken in portobello mushroom and artichoke sauce. Yummy!
I make salads a lot for me because I like them and dd will eat them if I am eating them.

I found it online and changed it a bit...
Take 1 banana and 1/2 zuchini and mash or use food processor. You can grate the zucc. put aside..
bmix 1/2 cup softened butter or marg. with one egg
now add 1 cup flour, 1 cup oatmeal and mix on medium speed... add the banana and zuc.
add 1 tsp nutmeg, 1 tsp baking soda, 1tsp cinnmon, and a handful or raisins, mix and drop on greased baking sheet. bake at 350 for about 12 minutes...

I add a trillion things to my Turkey meatballs....I usually add spinach puree and sweet potato puree and shredded really fine carrots and Zucchinni....I add Italian seasoning or Italian spiced bread crumbs and he loves them.

Re: List something HEALTHY that you made for your DC
I'm fortunate that DD is a good eater. She had grilled chicken, mixed veggies & pasta for dinner (& lunch tomorrow!). No need for hidden veggies with her, thank goodness!

What other veggies do you give? Anything new I should try?

You can substitute Yogurt in a lot of baking recipes. I have a great banana loaf recipe at home that calls for a cup of yogurt.
This past weekend, I made a yummy carrot cake for DH and Alex. Too bad I HATE carrot cake
