Who wants to help me with the menu for Jack's birthday

We are having a BBQ.

This is what I know we are having so far. I think we still need some sides. Also, if you can think of any other main dishes that I am leaving out - please let me know.

Hamburgers/Cheeseburgers
Hotdogs
BBQ Chicken
Skirt Steak
Baked Ziti

Salad
Corn on the Cob
Roasted Potato Medley (or any other potato side you can think of)
Orzo Pasta Dish

My mom wants to make other side dishes and I have no clue what to make.

What are other staples at BBQs? I HATE the macaroni salad/potato salads so I don't want to get them, I feel like they are a waste.

What about grilled vegetables as a side? Or maybe a shish kabob type of thing - my sister does shrimp a lot and it is popular.

As for macaroni and potato salads, if I see homemade, I make a beeline for them, if they are store bought, I don't touch them usually.

How about grilling some veggies on the grill..onions,squash,tomatos,mushrooms, peppers,asparagus, etc...

ohh yes - I forgot we discussed doing shrimp on the grill also.

Ok - don't think I'm nuts - but I don't eat vegetables - so - what would we have to do here - do I marinate them in anything beforehand?

I just brush them with some olive oil...

My mother is going to do a mix of white potatoes, sweet potatoes, and I believe squash is in there also. It's delicious. I think she makes it with EVOO and some other seasoning

I make a string bean salad with about 3 potatoes. You clean the string beans (cut each end off then soak for a minutes, swoosh in water and drain), then peal the potatoes. Put them in a large pot and cover with cold water. Cook it for about an hour. Drain really well and then dump everything back into the pot and add olive oil and salt and pepper. It is so good at room temp. Now if you are adding 3 potatoes I would make 3lbs of beans.

I also make pasta and brocolli with olive oil and garlic. I buy the frozen brocolli florets and the barilla plus penne pasta. I cook the pasta for 5 minutes then I add the brocolli to the pasta and let them finish cooking together. When it is done I drain. Then I warm up olive oil ( you will need alot to coat everything) and a lot of garlic in pot you cooked the pasta in. Once the garlic is in their for about a minute maybe a little less I toss the pasta and brocolli in their and then add salt and pepper. This is good served at any temp. If you want to make this a nother main dish you can added grilled chicken to it. I use about 1.5 bags of brocolli to one bag of pasta (it isn't a lot of brocolli

I always like to have a sort of pasta salad with a BBQ. My fave to make is very simple.. EVOO, tomatoes, garlic Chat Icon , fresh mozz, and basil.

Now my mouth is watering

For Jared's BBQ we're having the usual hamburgers/hotdogs. In addition to that, I'm making swedish meatballs and cold pasta salads.
My mother is making perogies and kielbasa(gotta have a little polish at the BBQ).
My MIL is making her spanish chicken and rice.

Plus I'm making the cake, probably cookies/cupcakes and having a fruit platter (I cut a watermellon in half and scoop everything out, then I put in other cut up fruit..including the watermellon).

Wow - everything you have sounds SO GOOD!!

I like the grilled veggie idea and the string bean or cucumber salad ideas a lot. How about a crudite of fresh raw veggies and dip? Tomato/Basil/Fresh Mozz salad? Some light fare to balance out the meat and carbs that you have.

Don't forget sauerkraut for the hotdogs

I would grill veggies too.

We do zuchinis, yellow squash. You can do peppers too.

Just brush olive oil, salt and pepper.

I cut them the "long" way so they are not little round peaces falling in the grill.

We are doing Chicken fingers for the kids
Baked Beans
Cucumber Salad
Homemade potato salad
relish and onions for Hot dogs
Regular salad
Pasta salad with antipasto( maybe)

We are serving hamburgers, Hot dogs, Ziti, Sausauge and Peppers, and swedish meatballs

I dont know if I would grill THAT much., Unles syour having hired staff to grill, the person grilling is gonna be standing over a hot grill for a looonnngg time.
