Sit down service (fancy side):
California Grill (In the Contemporary Hotel): It overlooks the magic kingdom, make a priority seating for 1 hour prior to fireworks. they dim down the lights and pipe in the fireworks music and it's SO beautiful and romantic. We went here the night before we were engaged and it was so romantic FH told me later he wished he had brought the ring
sit down (medium):
Cinderella's Royal Table)in the castle) I've been here for both the character breakfast (which is the BEST one on property, hands down), and for lunch. The food, service and atmosphere are great
sit down (theme):
Prime Time 50's Cafe (MGM):
it's themed like a 1950's kitchen with old TV clips playing, your brother or cousin serves you, you've got the set the table and play nice with your cousins and eat all your veggies or "Mom" won't let you have any dessert. it's a lot fo fun, very interactive
Counter Service:
Cosmic Ray's Starlight Cafe (MK, Tomorrowloand): They have burgers and cheesesteaks.I just think the entertainment (an animatronic loung singer alien) is a lot of fun.
ABC Commisary (MGM): It's crowded, but they have really good food and we've saved money by getting the kids meals
Snack:
Dole Whip (MK, on the bridge by adventureland)...soooo good and refreshing!
Coffe Cake muffins in the morning from the cart outside tower of terror in MGM

That's what I was going to say. They have this Pumpkin Sage Ravioli that I crave when I'm away from it!!
I also love Fulton's Crab House at downtown Disney. They are pretty near each other.
At Epcot, the Japanese place is great.
And at MGM we like the Prime Time Diner - but it's a lot more casual.

Oh I agree, the Japanese Pavillion food is GREAT! 
One tip....
If you're going to see Fantasmic at MGM you have to go an hour early at least tog et seated and the only food around there is pizza and stuff. What we did was we got take out from japan at epcot (they looked at us funny, but they did it), and we took the boat from epcot (which is right there) over to MGM and sat there eating a full gourmet japanese meal while we waited. Everyone was SO jealous!

AHH there are so many great places to eat in WDW!
I love Ohana in the Polynesian Resort
Also the Steakhouse at the Canadian pavilion at Epcot (Marymoon, help me out with the name here - you are the unofficial Disney expert  )
The restaurant in the Mexican pavillion at Epcot is sooo pretty , romantic ambiance for you and your man, Mich 
I know there are tons more, lemme think!

That's it! It's REALLY good. (I know you don't eat meat Jenn, but its got great steak) Thanks, it was driving me crazy and I didn't want to go onto the Disney website!
I love the Canadian pavillion, actually all of Epcot rocks IMO

If you want to go to Hollywood and Vine, I BELIEVE they have a fantasmic dining package where you get automatic seating after dinner for fantasmic. they aren't the best seats, but they're not the worst and it eliminates the long annoying wait

At Epcot you have to go to Canada and get their beef with potatoe dinner. It is by far the best food in all of Disney.

Michi: Have you been to disney before? Would you want to do a character meal?
I think the one at the castle is the best but I think you need a PS 120 days in advance now if you can't get that, try the princess breakfast at Akershuas (sp?) in Norway.
I do NOT reccomend the Cinderella dinner at 1900 Park Fare

I have been to the Living Seas, but it was a LONG time ago, so I'm not a good judge. At the time I thought it was super pretty but I'm not really a seafood person so I didn't enjoy it as much as some other people might have

nope never been there b4--im a disney virgin, so any insight u can give would be awesome, id hafta ask my bf about doing the charatcer thing, but I WANNA do it, i gotta convince him which i think i can do

Go for a late dinner. It was wonderful, and since we went later on, it was romantic, adult dinner!

You should get the "Unoffical Guide to WDW" it's incredible!!!
Even if you're not an obsessive planner (Iam) You should maybe plan which park/parks you want to go to each day and at LEAST plan your evenings.
There are so many nighttime events (Spectromagic, Wishes, Illuminations, Fantasmic!), that between that and your dinners without careful planning it's hard to see them all.
We always see Wishes several times, usually the first night, the last night and once from California Grill.
Our first day EVER in Disney we went to 3 parks We spent the day at MK, saw Fantasy in the Sky, took monorail to EPCOT for Illuminations and then the bus I think to MGM for Fantasmic! all in one night!
