Can I peel and cut potatoes today
for tomorrow? or will they turn gray?

I wouldnt do it...they might turn colors and if you keep them in water overnight...you strip out the potassium and in turn makes the potatoes taste bland....IMO.
When my dad was on dialysis....the only way he could eat potatoes if they were soaked overnight..and they never tasted the same...

I always do mine the day before and leave them in the fridge in the pot I am cooking to cook them in. I find it make them creamier because it takes out some of the starch in the potato. On the Food Network, Michael Chiarello recommends doing it the day before.
In fact, I am going to do them right now.

Cover them with cold water they wont turn all sort of gross colors.
