Am I being overly sensitive?
i think you are being overly sensitive about this....sorry. Maybe she wants to spend the holiday with her family. your parents are not her relatives. I do not spend the holidays with my brothers in laws because they are not my family. they are lovely people-but they are not my family.

Maybe you can invite them over for dessert? That way they can spend some time with you.
Feelings are not wrong, they just are. But as many people said it is the way life goes - changes happen. I agree she should have said something to you and discussed it. It may have been the same outcome, but knowing you host the holiday it would have been thoughtful of her to discuss it with you.
Have you told her how you feel?
