I just finished licking my plate from my leftovers!

I took a pork roast, sprinkled with pepper all over, then covered it in a minced garlic, rosemary and olive oil mixture. All over the top and bottom. (I originally also salted the roast, but with the bacon, no salt is needed at all!)

Then covered the roast with strips of bacon. Let it sit for 1 hr in the fridge.

Place 1 cup of chicken broth in bottom of pan, with 1 cup to be added later on.

Roast in the oven for 1 hour or until done, and make gravy with the drippings and what's in the pan.

It was SO SO SO GOOD with mashed potatoes.
