Re: Who's got amazing cupcake recipes?

I make cupcakes with chocolate chip cookie dough in the middle.

You just make the cupcake batter as you normally would and then take the premade pillsbury (or whatever) dough and freeze it in small balls. They should be about the size of a melon ball. You just drop a frozen cookie dough ball in the middle of each cupcake tin (it should be filled with the batter already). Bake as you normally would.

They are so good. When you bite into it you have gooey cookie dough. YUM!!!

It is not hard like a cookie but gooey like the center of a warm cookie. The dough has to be frozen though. I think because it starts out frozen it can not cook all the way when the cupcake cooks. I made them for my daughters birthday and EVERYONE loved them. It was so easy. I bought the pull apart dough and just cut each square in half. Then I put it in the freezer overnight and it was ready to go when I made the cupcakes the next day.

Re: Who's got amazing cupcake recipes?

I made these great smores cupcakes last spring. They went over really well. It's from allrecipes.com

* 1 (18.25 ounce) package French vanilla cake mix
* 2 tablespoons graham cracker crumbs
* 1 1/2 cups water
* 3 egg whites
* 24 milk chocolate candy kisses
* 1/2 cup graham cracker crumbs
* 1 (7 ounce) jar marshmallow creme

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
2. In a large bowl, combine the cake mix, 2 tablespoons graham cracker crumbs, water and egg whites. Beat for 2 minutes at high speed of an electric mixer.
3. Divide batter evenly among paper lined cups, filling about 2/3 full. Place a chocolate kiss in each cupcake, pressing in lightly. Spoon 1 teaspoon graham cracker crumbs onto each cupcake.
4. Bake at 350 degrees F (175 degrees C) for 18 to 25 minutes. Remove from the oven and top each cupcake with 1 teaspoon marshmallow creme. Dip spoon into hot water to prevent sticking. Return to oven for about 1 minute to melt slightly.
