We have a serious veggie haters in our household. DH is terrible. DS is doing his toddler thing and picking out carrots from his food. So here's what I'm doing, and looking if anyone has any more ideas.

I serve these things up, with a side of loose veggies, I want DS to always have the option of choosing a veggie on its own (just in case he ever wants to)

Dinner recipes also have to pass DH, which is terribly difficult to do, because if he even sees a veggie color hes starts picking at it. Chat Icon


Meatballs
Usual meatball recipe with beef/chicken/turkey/veal/pork whatever ...
defrost and finely chop frozen chopped spinach
Add 1:3 spinach to meatball mixture
Add a pinch (or more if you like) of cumin (gives meaty flavor)
bake/fry/cook in sauce whatever you like

I'm sure this would be great with chopped carrots and mushrooms too, but I can't get it passed DH, he'd prefer the mushrooms separate.

Zucchini Pancakes
Basic potato pancake recipe, but instead of 1/3 of the potato replace with shredded zucchini.

Omelet Nuggets
Melt 1 tbsp butter on medium heat, once it melts reduce to lowest heat
Beat 2 eggs in separate bowls
Finely chop spinach carrots (almost any veggies)
Finely chop cheese (mozzarella, or any cheese that melts works)
Pour the first bowl of eggs in the pan, let it set a little
In the second bowl, mix in the veggie cheese mixture
Pour second bowl over, cover the pan with lid or foil and cook till cheese melts
When cheese melts fold over half to make an omelet
Let cool and it will easily cut into almost any shape.
(DS likes them cut into sticks)

The will be yellow on top and bottom and no indication of veggie contents, when they eat they will first taste the smooth texture of butter cooked eggs, and by the first bite, a salty creamy cheese filling. Its delish. Our favorite combo is spinach and carrots.
