vegetarian meals
Our new au pair is a vegetarian. Any suggestions on meals I can make for her?

She is an au pair doesn't that mean she cooks for you? 
I buy a lot of veggies and cook with whole grains some are not GF though. Last night I had to use what I had on hand so I made quinoa. Then I sautéed garlic in EVOO with halved grade tomatoes. Added streamed green beans, yellow squash and a can of chick peas. Add fresh basil, squeeze of lemon juice, s&p, crushed red pepper flakes too. Kids loved it!
I would Google rice dishes and veggie dishes. I use a lot of canned beans and combine a grain, veggies and beans a lot.

I agree. For an au pair that has so many dietary restrictions, I would have her prepare her own meals. I don't think that is far fetched.
Like the pp, I would usually suggest meals with beans, but if she is gluten free I don't think she can have beans.
I will recommend this website. It is full of gluten-free, diary free, vegetarian recipes.

Rice and beans, Quinoa salad, Barilla gf pasta with sauce, vegetarian chili with Tostitos or over a baked potato

Thanks everyone....def nervous as she is now dairy and gluten free....I guess I can have her cook for herself but wanted to have some ideas. Thanks for the website!!!
