Hmmm, I just made this yummy soup. It was my first attempt at a broth based soup and I am pretty proud of myself. It makes a lot so if you want you can cut this in half, but I plan on freezing some of mine for those lazy sunday afternoons. Here is what I did:

1 large onion chopped
1 1/2 heads garlic chopped
2 celery stalks chopped
4 carrots sliced
4 large chicken leg quarters (~1.5lbs)
1 ham steak (~2.5 lbs)
3 tbsp dried parsley
1 tbsp dried thyme
salt & pepper
1/2 bag of great northern beans rinsed
1/2 bag of pink beans rinsed
1/2 bag of roman beans rinsed

In a large pot I put the chicken, onion, garlic, celery, parsley, thyme and salt & pepper with enough water to cover chicken, brought to a simmer and simmered one hour. I removed the chicken and let the water simmer for an additional 1/2 hour. Then I added the carrots, beans and ham steak and let it simmer for 1 hour. Remove the ham and let the beans simmer for another 45 minutes, adding some water to help thin it out a bit. While the beans where simmering, I shredded the ham and took the chicken off the bone. Threw it all back in the pot. It turned out really yummy. It was almost like a bean stew.
