Thanksgiving week Menus

Short Week.. thank goodness. Show me what's up for the week in your homes!

Sunday: Arroz con pollo
Monday (Rob's Bday): Burgers, fries, tossed salad, chocolate Milkshakes
Tuesday: Beef and Broccoli Stir Fry, Fried Rice
Wednesday: Pasta with Chickpeas, sausage and red sauce
Thursday: Turkey day!!!!!!!!!!! Not cooking!
Friday: Turkey Soup, Italian bread, simple salad
Saturday: Ginger Soy Salmon, Brown Rice, Sugar Snap Peas, Asian Style Salad.

Today: Soup, lasagna (all from scratch including sauce)
Mon: Red Lentil Dhal with rice, broccoli and curried chicken
Tues: Chilean Quinoa with fiesta steak strips
Wed: Homemade Pizza
Thurs: Turkey day
Fri: Up in the air
Sat: up in the air

Gotta say, this menu planning takes the stress out of cooking and saves us money!

Steak strips:
Ingredients
1/2 cup fresh lime juice (about 6 limes)
3 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh or 1 teaspoon dried oregano
2 teaspoons ground cumin
1 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 garlic cloves, chopped
2 (10-ounce) boneless sirloin steaks, trimmed and cut into 1/4-inch strips
2 teaspoons olive oil
2 cups sliced onion
1 cup yellow bell pepper strips
1 cup red bell pepper strips
3 cups hot cooked long-grain rice
Preparation
Combine the first 7 ingredients in a large zip-top plastic bag; add steak strips to bag. Seal and marinate in refrigerator 1 hour, turning bag occasionally. Remove steak from bag, reserving marinade.

Heat oil in a large nonstick skillet over medium-high heat. Add steak; cook 5 minutes, stirring frequently. Add reserved marinade, onion, and bell peppers; cook 6 minutes or until liquid almost evaporates. Serve over rice.

Monday- Having dental work done- so soft foods- I cannot believe I have to have my crown replaced and I am so angry it cracked!Chat Icon Chat Icon Chat Icon Probably egg drop soup and low mein.
Tuesday- Meatloaf and mashed potatoes- still soft foods.
Wednesday- Our annual trip to IHOP for the night before Thanksgving.
Thursday- Thanksgiving at my sisters house
Friday- having company - not sure yet.

Saturday: MIL's birthday dinner: Antipasta, fresh pasta with Amatrichiano, Lemon Garlic Chicken, Broccoli Rabe & Sausage, Salad, Bread, Chocolate Cake, Rice Pudding, Chocolate Pudding Trifle, Fruit
Sunday: Christening at Matteo's
Monday: Grilled Chicken with fresh pasta over Left over Amatrichiano Sauce (from Saturday's meal)
Tuesday: Left over Lemon Garlic Chicken, Sweet Potato Mash, Broccoli
Wednesday: Pizza (I am cooking ALL day)
Thursday: I am hosting
Friday: Chinese Food at DH's uncle's
Saturday: Leftovers from Thanksgiving

We're having "Fakesgiving" tonight.... my mom is here visiting and has to be back in NY for real Thanksgiving, so my menu is a little different!

SUNDAY - Fakesgiving! Turkey, stuffing, green bean casserole, sweet potatoes with marshmallow, baked macaroni & cheese, cranberry sauce... nutella poundcake with gelato for dessert!

MONDAY - Homemade white pizza with arugula

TUESDAY - Chicken parm rolls with burnt broccoli

WEDNESDAY - Chive risotto cakes with mixed greens salad

THURSDAY - As a nod to Thanksgiving, we're having turkey & cranberry ravioli in a gravy-esque sauce

FRIDAY - Chef's night off! AKA sushi night Chat Icon

I totally forgot to plan my menu for this week. It's such a short week, and I have a miserable cold, and I am cooking Thanksgivng so thats been on the brain! Keeping it simple...

Tonight - Bow tie pasta with sweet sausage & spinach in a tomato cream sauce served with garlic bread and salad

Mon - Filet Mignon, baked potato w/sour cream & chives, burnt broccoli

Tues - out to dinner for our anniversary

Wed - preparing for Thur, & making the desserts, so it will be hot dogs on the bbq & beans

Thur - Turkey Day

Fri - Turkey panini's w/ fontina cheese & pesto

Sat: We were at a b-day party with hero sandwiches, baked ziti, and lots of dips etc

Sun: Meatloaf, Red mashed potatoes, Hayley's burnt broccoli

Mon: Cheese Boureg (similar to Greek Cheese pie but different cheeses) and tossed salad

Tues: Chicken Marsala with Wild Mushroom Cous Cous and steamed veggies

Wed: Soup and Grilled Cheese

Thurs: Turkey Day!!!

Salmon is just one (of the many) things I could do better.



It's really just a throw together.. but my husband loves it.

In the morning I put the salmon in a baking dish and add soy sauce, a good bunch of fresh minced ginger (I use probably half a large root), 5 cloves of minced garlic, about 4 chopped scallions, the juice of a lemon and about 2 tablespoons of garlic. I let the salmon take a bath in the fridge until I'm ready to cook it - it marinates all day.

I pour off most of the marinade (sometimes I retain a little and heat it up as a sauce for the rice) and bake it in the oven on 325 until it's cooked through. Quick and simple.. but lots of flavor!

Not planning on going food shopping this week so I just have to use what I have on hand.

Sunday: Leftover turkey bolognese with pasta, salad and garlic bread.

Monday: Chicken soup w/ tortellini, caprese salad

Tuesday: Sausage and peppers over polenta, salad (didn't make this last week)

Wednesday: Going out to dinner in the city.

YES! I did make it once before with ground turkey - but I think I'm going to try using leftover turkey breast this time! Chat Icon

Tuesday: Chicken cutlets breaded with crushed french's fried onions and rice

Wednesday: Take out - I'll be cooking and prepping for Thanksgiving all night

Thursday: Thanksgiving!

Friday: Leftovers from Thanksgiving

Saturday: Out to dinner

Sunday: Maybe a pot of sauce with sausage and meatballs. We'll see.
