I have a picky eater so while some of this isn't healthy, I kind of roll with the punches as long as he is eating. I also have no problem serving breakfast type foods at lunch.

I also find if I make things look fun and exciting, he is more apt to eat it.

Pasta
Leftover lasagna
Homemade English Muffin pizzas
Sandwiches (ham)
Fun sandwiches (peanut butter/cookie butter/strawberry jam)
Crepes w/fruit and Nutella
All kinds of fruit chopped up with yogurt as a dipping sauce
Hot dogs
Hamburger
Pierogies are a new favorite
Scrambled eggs

My 3yr old will have either:

scrambled eggs with cheese and toast with cream cheese

grilled cheese sandwich

french toast

meatloaf with potato "fries"

pasta with meatsauce

turkey meatballs

bbq chicken quesadilla

*We always follow up lunch with fruit

He's a great eater and eats a lot so I try to keep luch light. I used to give him "dinner" foods all the time for lunch but started thinking the meals were too heavy for him.
