Pumpkin Spice Muffins - easy and delicious!
YUM!!!! Made these this weekend and gave most of them away because they were too yummy 
Spice Cake Mix
15 oz puree pumpkin
2/3 cup water
Preheat the oven to 325 degrees
Beat the cake mix, pumpkin and water for about 2-3 minutes. The batter will seem light and airy.
Spray 2 6-cup muffin pans (I used 1 12-cup cupcake pan I think it's the same thing) with non-stick cooking spray. Scoop the batter into the muffin pan and top with sprinkles (optional). Bake for 35-40 minutes.
I made 12 large muffins and they are 4 pts each but well worth it!!!!

Nope it doesn't matter! I used Supermoist. In fact the original recipe for this used chocolate cake mix. Just double check to make sure that if you divide up the servings it's still 4 pts.

I looked it up online and the calories for 1/12 of the spice cake mix is 180 calories and 4 grams of fat.

Yummm this looks awesome. You know my weakness for pumpkin muffins and these are a heck of a lot better then the 13 point DD muffins.

Finally made these tonight! A year later  and they were amazingly fantastic! I combined an idea from another receipe and added 1 tsp of pumpkin pie spice and 1/4 cup raisins. Much better option and tastes just as good as the 13 point DD pumpkin muffin.

I was just at Stop and Shop and they didn't have Spice cake mix. Do most stores carry it? I was really excited about making these.

Is there another cake mix you can use? They don't have spice cake mix here. However, I can get pumpkin.

Ooooohh! Im trying this. I have a box of Spice Mix ready for Pumpkin Muffins.....but the recipe I have is the much fattening kind.
I will be making this one instead!
To add......Spice Cake Mix can be hard to find but there is a S&S by me that carries it. It's Betty Crocker I beleive.

I think you can use basically any kind of cake. Chocolate would be good.

Bump...made these over the weekend and they were awesome! Added cinnamon and pumpkin pie spice. Made 15 muffins at 125 cals each. YUM!
