Pasta, Cheese and Trees (A Rachael Ray recipe)

I found this in Parents magazine and I am trying it tonight.

1 pound penne, corkscrew pasta, or medium shells

1 pound broccoli tops

1 tablespoon extra virgin olive oil (EVOO)

2 tablespoons butter, cut up

3 cloves garlic, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan or Romano cheese

Salt and freshly ground black pepper, to taste


Cook pasta to al dente according to package directions. Meanwhile, pull apart broccoli into small "trees." Put the broccoli into a pot and add enough water to just cover the tops. Bring the water to a boil and add 4 pinches salt. Cook for 5 minutes once the water comes to a boil. Drain.

Pour EVOO and butter into a deep frying pan and heat over low heat. When the butter melts, add the garlic and cook 5 minutes. Stir in broccoli and cooked pasta. Add ricotta and Parmesan, and stir to combine. Season with salt and pepper. Makes 4 to 6 servings.

I made this last night for dinner, i added alittle crushed red pepper, it was good, next time i make it I will add chicken.,

I made this last night and it was good! I added some grilled chicken to it also.

My DH (who is VERY picky) turned up his nose at first because it has broccoli, but even HE asked for seconds - which is a huge accomplishment Chat Icon

I made it too and i found it so bland. I don't know what i did wrong. I used part skim ricottta...maybe that was it. If I make it again i will add some chicken.

I thought it was very bland too and I felt that there was just a little too much garlic.

I thought mine was a little bland at first but then I added lots of salt (I never use salt, so maybe it just felt like "a lot") and I also added a little extra parm and romano cheese. I threw in some Mozzarella too, for good measure. Chat Icon

I made it tonight... I'm just looking at it, after I took 3 or 4 bites. It's so bland it's not worth chewing.
