I have a great taco salad that everyone loves. It's real easy to make too.
The only thing is do not put it together until you're at the party or just before you leave or it will get soggy.
1 lb ground beef (cook morning of party)
Grated cheddar cheese (1 package)
Lettuce – shredded – I don’t use that much just enough to add flavor
1 jar of salsa (I usually add to the beef)
1 bottle of Catalina dressing
Tortilla chips
Do not mix the ingredients until you are at the event you are serving!
Brown ground beef and store in tupperware until ready to use. You can add the salsa to this too. Store in refrigerator until ready to use.
In a large bowl, combine ground beef, cheese, lettuce and salsa.
Crumble tortilla chips while still in bag. Combine the tortilla chips to the ground beef mixture and then gradually add catalina dressing. When it has reached a nice consistency, serve with chips or alone.

You can always do a tomato salad. Make Balsamic Vinaigrette, chop up some red onions and slice up some tomatoes. Use as many different varieties as you can find.
