How about Borscht? We love the Betty Crocker recipe

Betty Crocker Borscht

Don't let the beets scare you, it doesn't taste or smell like beets. Kind of a tangy stew. REALLY good.

(we don't use the pork hock)

Vegetable Beef Soup

Ingredients
1 lb beef stew meat
1 tablespoon garlic, minced
12 cups water
4 tablespoons vegetable stock base
1 1/2 cups carrots
1 1/2 cups celery
1 1/2 cups fresh broccoli
1 1/2 cups green beans
1 1/2 cups zucchini
1 cup diced onions
1 1/2 cups corn
1(14ounce)can diced tomatoes

Directions

1In a crockpot, place 9 cups water and vegetable base. Stir until dissolved. Turn the crockpot on high. Remove 1/4 cup of the broth.

2In a large, heavy saucepan, place 1/4 cup broth and turn on high until it boils. Add the fresh vegetables, cooking until wilted, about 5 minutes. When wilted, but not soft, add to the broth in the crockpot.

3Saute the garlic in a skillet. Coat the meat in a flour, garlic salt, pepper, seasoned salt mixture. Add the meat mixture to the saute. Cook until browned. Add to the crockpot soup base.

4Continue to cook on high for 6-8 hours. Serve hot.

You can also make beef & barley soup. I don't have a recipe handy, but there should be one on the back of the bag of barley.

Re: Need new ideas for stew meat...

sometimes I use stew meat to make pepper steak...the recipe I have is a little salty, but I make it with brown rice, so it kind of balances out,

1 package Brown Gravy Mix
3/4 cup water
1 tablespoon soy sauce
2 pounds flank or sirloin steak, thinly sliced diagonally (or stew meat)
1 tablespoon vegetable oil
1 medium onion, sliced
2 bell peppers, cut into thin strips

1. Mix Gravy Mix, water and soy sauce in medium bowl; set aside.

2. Heat oil in large skillet on medium-high heat. Add beef; cook and stir 3 to 4 minutes.

3. Add gravy mixture, onion and bell peppers. Bring to boil. Reduce heat to low; simmer 10 minutes. Serve over rice, if desired.
