Mashed Potatoes...What kind of potatoes are the best to use?

Another question from the cooking novice Chat Icon Which ones are best to mash? Idaho, Russet, Yukon? I'm clueless!

there are several options... red potatoes are the classic.... russet are a no-no... they're meant for baking.

Generally, if you want to keep the skins on, the best choice is a thin-skinned potato like fingerling potatoes....

It would be a crime to mush-up purple potatoes (they have a lovely shades of purple inside that would be destroyed by mashing)

for home, I use classic red or yukon (although that comes out a bit pasty and dense IMO)... for company, fingerling, or unmashed purple potatoes cut in half and sauteed in butter with shallots

I use either russet or Yukon gold.

i love yukon golds .. i leave the skin on and mash them with butter garlic and a little cream salt pepper and parsley .. i will also use red skinned but they are very gluey sometimes

I actually always use Idaho potatoes -- I boil them and then pass them through a food mill, add milk and butter ans salt to fluff them up and then bake them in
the oven for about 20 minutes. So yummy!

Yeah, it threw me for a loop too! And in typical Cook's style, there's a really specific way to do it -- add butter (melted) first, then cream (warmed).

I use reds or baby yukons. I leave the skin on. I use melted butter and warm milk.

ITA!!! DH used to HATE mashed potatoes till I came along and started making them with Yukon golds....they come out great!

This is the recipe I am making if anyone is interested. From my BFF in the midwest.

10 medium potatoes

garlic salt

1 - 8 oz. pkg. cream cheese

1 cup sour cream

chives

paprika

butter



Cook, drain and mash potatoes. DO NOT ADD ANY MILK WHEN MASHING POTATOES or they will get runny. In a large bowl, whip softened cream cheese and sour cream together until blended. Add mashed potatoes gradually to cheese mixture. Add garlic salt to taste and small amount of butter. Pour into greased casserole. Brush top with butter, sprinkle with paprika. Bake 350 degrees for 30 min.



These can be made the day ahead and refrigerated. Add more time for baking.

I would up using Russets and it was delish!! The cream cheese made it extra creamy and rich!
