Make ahead meal prep

Being pregnant I have negative desire to cook or even eat much - but I need to get back into cooking dinner and maybe meal prepping/planning or easy make ahead meals will help.

But I am picky. I like to think I'm not but I am.

What are some good make ahead meals or easy weeknight meals that aren't the same chili/ziti/burger routine.

So far I came up with:

Sunday: Biscuits and gravy
Monday: ?
Tuesday: ?
Wednesday: ?
Thursday: ?
Friday: ?

I don't care much for leftovers unless it's things like soup, stews, pasta, etc.

following.

also i found a few on pinterest- search freezer meals (there's a teryaki chicken that is just a couple breasts, honey, teryaki, & peppers -- and u pop into oven for like 30 or 45. make some rice, boom dinner. mmmm)

Tacos are easy and you can cook the meat and seasoning ahead if you want. I keep the toppings simple and just do shredded cheese and a quick guacamole (just avocado and lime) if I'm short for time.

Sometimes I but a big pack of ground beef and do a pan of taco meat and a big pot of sauce at the same time. I portion some for the freezer and wet have done that week for quick dinners.

Not a make ahead but one of our current easy favorites is pesto chicken. I buy jarred pesto and just pour that over chicken breast and bake covered. After about a half hour remove the foil and throw on shredded Mozzarella. Broil until the cheese melts. So easy and tasty. Since I have the oven on already I usually roast veggies like broccoli to go with it and I use the microwave frozen rice with it.
