or a pasta salad - more veggies than pasta. - Broccoli, olives tomatoes, whatever ......usually in italian dressing

Roast the veggies on the grill. You can toss them in EVOO & Balsamic Vinegar and put them in a veggie basket. They come out really good.

I like to use red & green peppers, red onions, mushrooms, zucchini and squash.

I don't eat zucchini or squash raw. I presume you could, but I wouldn't recommend it. It is hard, difficult to digest and the taste is just not good. you can grill it with the skin on but I also always take the skin off of squash.

Roasted veggies are so yummy. We do asparagus, potatoes cut small skins on, zuch and squash(skins off and cut small), mushrooms all tossed in evoo s&p

Baked Beans- go to Pioneer Woman's website and search her baked beans O.M.G. so freaking good and a breeze to make!

Grilled corn on the cob

Pasta salad. We do: bacon or salami, parm cheese, cucs, tomato, cauliflower, brocolli, multi colored peppers, and whatever pasta we have. We toss it in red wine ving and evoo or use the itallian seasoning packets for dressing.

Cucumber, mozz cheese, red onion, black olive, tomato salad tossed in balsamic and evoo

Coleslaw. Tyler Florance's ultimate coleslaw is awesome!

We grill veggies all the time (peppers, broccoli, asparagus, mushroom, onions, etc... we mix them together or do just one)... do it before you do the meat, then just put them in a covered dish. They do not need to be not right off the grill!!!

Bean salad
cucumber salad
tomato/cucumber salad
corn salad
pasta salad broccoli, roasted peppers, onion, etc (whatever you like)
Green salad
Grilled portobella mushrooms with balsamic glaze

Caprese skewers always are a huge hit at our bbq's. We do cherry tomatoes, Fresh mozz balls and fresh basil and just drizzle with a simple dressing made with olive oil, a splash of balsamic, some oregano, salt, pepper and garlic.

We like to do a nice crudite including cucumbers, radishes, baby carrots, celery sticks and broccoli with a cool sour cream based dip.

Grilled marinated portabello mushrooms are great. Oh.. and grilled vidalia onions are sooo sweet and delicious! You can soak and grill broccoli rabe too!

We also like big salads.. just a nice big house salad with baby greens and other veggies with a nice dressing.

When we do zucchini (which is regularly!) I slice off the ends and then slice it down the middle. Then I spray it with pam (or you can spread a little olive oil) on the cut side and sprinkle dried basil and oregano on it. Cook it with the skin on. LOVE it!

Corn is also a great easy side and can easily be cooked stovetop or in the microwave if you don't have room on the grill Chat Icon
