Is this grammatically correct?
"I know that mom's going to go to the store." where it stands for "mom is"
I know it's not showing possession and is not a contraction technically. Besides rewriting the sentence, to say "mom is", is it correct as it's written?
Can anyone point me to an online grammar source that would prove this either right or wrong?

Hmmm I don't think that's correct. I don't think you can just make contractions out of any words.

The sentence as written is almost correct, although any contraction is informal. Because "Mom" is the name being used to identify who is going to go to the store, it should be capitalized. If it were written differently such as " I know that my mom is going to go ...", then it would not have to be capitalized as mom is a description of who's going, not the name of who is going.
Someone suggested that "to go" should be dropped, however that would change the grammatical tense and the meaning of the sentence. "Going to go" implies at some time in the future, whether five minutes or five hours, and means the person has not gone yet, whereas "going to" the store means Mom is actively on her way.

It's fine. Replace it with the pronoun "she's" and it's the same. Contractions are informal.
