the other day someone I know made, cut asparagus, mozzerella cheese, wrapped in proscuitto... with a balsamic vinegarette... It was delicious!
you can also do Proscuitto wrapped cantelope
A clam dip
tomato, mozzerella cheese, fried eggplant (layered) with basil a drop of olive oil OR balsamic vinegar
a pasta salad- with white beans or chick peas, black olives,

Can of diced tomatoe
minced garlic
fresh basil chopped
fresh parsley chopped
couple of tablespoons of olive oil
Sea salt
Mix together...let sit at room temp for at least an hour to let flavors combine.
Slice Italian bread..grill both sides on BBQ...serve with tomatoe mixute.

Pasta Skewers - put a tomato, then piece of mozzerella, then 4 tortellini, then another piece of mozzerella and then one final tomato on a skewer. Simple and yummy. Anything on a skewer seems summery. :) Various pieces of fruit on skewers is good too.

I love asparagus and a slice of fontina wrapped in prosciutto.....I make a lemon aioli to dip in.
Also, ball up a melon and wrap that in prosciutto, stick with toothpicks......can you tell I love prosciutto?
DEFINITELY fresh mozzarella and tomato with olive oil, fresh basil, s&p.
You could make an olive tapenade and put it on crostini. Just pulse up some olives with olive oil and some spices, voila!
