it didn't say on the box if the ricotta was pasteurized or not

i really wouldn't worry about it. i think most cheese is pastuerized these days and i can't imagine a place using unpastuerized cheese. i think you'll be fine

i'm sure its fine. mmmmhmmm sounds yummy. i've eaten fresh mozzarella - i think as long as you get it from a reputable place it shouldn't be a problem
