How to deal with people who have unreal expectations?
For instance, if someone asks you for help and then snubs everything you offer because it isn't good enough, what do you say? 
eta: My friend WANTS only the best but kind of can't accept that what she wants and what she can afford are in two different leagues. KWIM???

It sounds like two different situations.
I never say anything to people with unrealistic expecations. They won't listen, and then they will resent you for not encouraging them.
If someone asks for help and then snubs all my offers, I'd just stop offering.
