How do you know when potatoes have gone bad?

How do you know when potatoes have gone bad?
I bought baking potatoes last week and just pulled them out to bake them. They are still hard and dont smell but a couple of them have little sprouts starting. Can I still use them or do the sprouts mean they are bad?

cut 1 open and see if it changed color. I think they're ok... especially if you're peeling them to make mashed potatoes.

If they have started to go green, you shouldn't use them. They are okay if they have eyes, just cut their little eyes out.

I agree. If you have a potato peeler, use the end to scoop out the eyes, and they should be fine.

Bad potatoes also start to go a little soft and have a rancid smell.
