Home Brunch ideas for mother's day...

OK, so I bit the bullet and invited SIL and MIL over for Mother's Day Brunch (and only because I am going out with my family for dinnerChat Icon )
Now, I need to make this fabulous...

Anyone have some great brunch recipes, or even just ideas on what to serve?

the best things to make are things that taste delish even at room temperature.

what about a quiche or two (I love spinach with turkey bacon), fruit salad, and something decadent like a french toast made with brioche or challah bread.

I find french toast tastes better when cooled than pancakes, but that is just me.

you could also do some carrot or banana muffins, make a nice batch of coffee and of course

MIMOSAS.

have a few different Nectars on hand (I love LOOZA peach, pear, passion, and apricot and of course mango) along with traditional OJ...and a bottle of prosecco or sparkling wine.

fresh flowers and a nice table setting (or set up if you are doing buffet, which I do b/c I have no room!) will make even the simplest things specail.

you are a brave woman pulling double duty! may the force be with you!

I make Grand Marnier French Toast and my Mom loves it so much that I have to make it for her all the time and it's sooo easy!

16 ounces frozen strawberries, thawed
1/4 cup sugar
2 tablespoons orange liqueur (recommended: Grand Marnier)
For French Toast:
3 eggs
1/2 cup milk
1/4 cup orange liqueur (recommended: Grand Marnier), optional
2 tablespoons sugar
6 thick slices bread, cut in 1/2 diagonally
Whipped topping (recommended: Cool Whip)



In a large bowl, combine strawberries, sugar, and liqueur. Let stand 1 hour, stirring occasionally.
Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.

In a shallow bowl, whisk together eggs, milk, liqueur, and sugar. Coat each slice of bread on both sides with egg mixture. Place coated bread slices on hot oiled grill. Cook for 3 to 4 minutes per side.

To serve, place 1 piece of French toast on plate. Top with strawberries and whipped topping. Add another slice of French toast and repeat.

INDOOR: Prepare bread slices as directed. Melt 2 to 3 tablespoons of butter on a hot griddle (over medium-high heat). Cook prepared bread slices until golden brown on both sides. Serve as directed.


This is Sandra Lee's recipe, but I don't do it outdoors, I just use the pan like I would for regular french toast!

Egg Casserole

2 packages crescent rolls
red/green peppers
2 containers of egg beaters
Onion
5 eggs
cheddar cheese

Layer bottom of lasagna pan w/crescent rolls. Make scrambled eggs – do not cook all the way – leave a little moist. Pour on top of crescent rolls. Saute peppers and onions and add to pan. Sprinkle cheddar cheese on top. Bake at 350 for 20 minutes.

When I lived in NY I did this every year for my mom and MIL. This is what I always had on hand. I also invited others so I always had 10 people minimum.

Stuffed French Toast (the recipe above sounds fabulous)
Quiche
Fruit and Granola Parfait (vanilla yogurt with honey and cinnamon added)
Assorted muffins and bagels
one year I made hash browns
Mimosas
Coffee with all types of creamers

Brunch is a great idea.


I made or put together a lot of the stuff the night before so I was not a crazy person the morning of.

I'm so proud of you! You're definitely going to need MIMOSA's ;)

Garden Salad (had an amazing garden salad at a bridal shower brunch with goat cheese, strawberries, walnuts and balsamic viniagrette)
French Toast
Grilled Chicken Wraps

Scrambled eggs (you can make as your guests are ready to eat)
sausage/bacon
roasted potatoes
bagels w/ all the fixins (cc, lox, tomato, red onion, capers)
Fruit salad
mini muffins
shrimp cocktail
fresh mozz & tomato
spinach dip
mimosas
bloody marys
quiche

thanks everyone...and to clarify, I am being selfish...

I want to go out to dinner with my sister and my cousin so I that is why I am doing brunch Chat Icon

I don't have a relationship with my mom, so Mother's Day is hard for me...this is the first year that I am really trying.
