Great quick and easy chicken paella
1 tbsp. olive oil
2 cups of water
1 box of spanish rice mix
1 package of perdue chicken short cuts southwestern style
1 can (14.5 oz) diced tomatoes - not drained
1 med. sized onion
1 cup of frozen peas
Heat oil and finely chopped onion in non-stick pan for 2 minutes, stirring occassionally.
Remove seasoning packet from rice mix. Heat rice in pan for 2 minutes on med-high heat. Stir occassionally.
Stir in 2 cups of water, can of tomatoes, and seasoning mix. Bring to a boil. Cover, and heat on low heat for 15 minutes.
Add chicken and peas. Cover, on medium heat for 3 minutes.
Serve and enjoy!
