Food Blog Recipe Trials

If anyone's interested... I thought maybe we can share recipes that we've tried from different food blogs and how the dishes came out Chat Icon I can make this the "official" thread if anyone ends up being interested!

I've been using the new "Google Buzz" to do this already, so I will copy/paste onto here Chat Icon

Re: Food Blog Recipe Trials

I'll start...

Broiled Tilapia Parm

YUM! I was out of mayo so I used full-fat ricotta cheese instead and substituted Italian seasoning for the dried basil, onion powder and celery salt. This was DELICIOUS and super quick! I served with couscous and steamed sugar snap peas

----

Herb-breaded Tilapia

Simple & really good recipe! I added some herbs de provence to the breadcrumb mixture and served with roasted broccoli, cauliflower and lemon slices drizzled with EVOO & sprinkled with lots of fresh garlic.

----

Banana Chip Muffins

These muffins are SO good! You can't tell that there is whole wheat flour in there AT ALL. I used a mixture of milk chocolate chips and bittersweet chocolate chips and they were devoured within a day! I also used soy milk in place of the skim milk.

----

Pancake Squares and Cinnamon Biscuits

Made both of these for Valentine's day breakfast - very good! I doubled the pancake square recipe and used a 9x13 pan. I made 3 sections: blueberry, bittersweet chocolate chip, and banana walnut. They were super easy and very yummy!

The cinnamon biscuits are just that.. BISCUITS. I think I was imagining more of a Cinnabon cinnamon roll that was light and fluffy and these weren't that. These were still really good though! They are just much more dense and biscuity.

----

Chocolate Nutella Molten Lava Cake

It's basically molten cakes with a little scoop of nutella in the middle. Next time I would probably mix the nutella right into the batter because in not doing so, the nutella didn't mix very well or incorporate with the gooey center of the cake and you could literally tell exactly which part was the nutella. The cake part of the molten was really delicious - it was light and fluffy and perfect. The centers were SUPER gooey... we also ate them right out of the rammekins with fresh homemade whipped cream on top instead of hazelnuts and strawberries - I tried inverting one and it collapsed! I'd also recommend letting them sit for a minute or two after coming out of the oven

----

Perfect Potatoes Au Gratin

FANTASTIC! I made these potatoes au gratin with some juicy steaks - delicious! I'll be honest and say that I didn't freshly grate the cheddar since I already had a bag of pre-shredded cheddar on hand, but they were still really good! I also made just 2 layers. The tops were perfectly crispy and the insides were creamy! I'm thinking about making these in muffin tins next time!

----

Lemon & Basil Chicken Breasts

Made this last night but didn't pound the chicken breasts. I used 2 big, thick chicken breasts and marinated them for just 10 minutes. They needed about 6 minutes/side on the grill pan. I served with orzo mixed with EVOO, s&p, a few chopped kalamata olives, feta cheese, dill, chopped cucumber, chopped tomato, and finely minced red onion.

----

Oven Ham Sammies

OMG! These sandwiches were to die for! I used sopressata and provolone instead of ham and swiss - and I only used half of the butter. I also let them sit for just 2 hours and baked for 12 minutes. The buns were crispy and buttery with subtle flavors of mustard and a little crunch from onion and poppy seed. Will definitely make these again! I think next time we'll try prosciutto!

----

White Bean Salad

Served this last night with the oven ham sammies. I let the flavors combine for 2 hours and I honestly felt like it was missing a little something. I added a little more red vinegar but it still seemed to be a little bland.

Hayley.. why must you torture me by sending me to places with pictures of delicious food.. and then add insult to injury by describing each morsel in a way that makes me want to run out IMMEDIATELY and start buying all the ingredients.

Has anyone you encountered blogged about PB cookies? I'm still craving them.
