Favorite summer meals....
what are your favorite things to eat over the summer?
would love any full meal (main dish, side dishes) inspiration!
last night we had burgers with all the fixins, corn on the cob, and crunchy romaine salad. that's a favorite summer meal of mine!

Marinated grilled skirt steak, pasta salad, corn on the cob.
Fish tacos w/all the fixins, cous cous, roasted balsamic veggies.
Burgers, dogs, cole slaw, potato salad, mac salad, beer 
Foil packet snapper w/garlic, key lime, lemon and orange, coconut rice and steamed cauliflower.

Definitely burgers on the grill, macaroni salad, and baked beans is one of my favs!!
We also do a lot of fish in the summer on the grill as well. Lots of fresh grilled veggies. And we tend to eat more salads as main dish. We throw in marinated steak or chicken, even shrimp. I hate turning the oven on in the summer, although I do, cause another fav is oven fried chicken with corn on the cob!!!

My favorite non-BBQ summer meal is
Bruschetta Pasta
Fresh Crusty Bread
Green Salad
1 lb pasta (any kind is fine -rigatoni, penne, even linguini)
plum tomatoes, seeded and chopped
red or vidallia onion, sliced thin
fresh mozzarella ball, cubed
Fresh Basil, sliced 'Chiffonade' style
garlic, minced
olive oil
Salt & Pepper to taste
use your judgement on tomatoes, onions, basil and garlic ... everyone likes it differently - my family are garlic and basil lovers so we tend to overdo it.
In a bowl, combine tomato, onion, mozzarella, garlic, salt & pepper and olive oil. Let sit for a few hours or overnight.
Boil Pasta according to directions and taste.
Pour mixture over pasta
Serve immediately
Shave Parm Cheese over it
The warm pasta helps to melt the cheese a bit, yet it's not a super 'hot' heavy pasta dish.

I love grilled skin on dogs. I like them on a buttered and grilled roll with spicy mustard, relish and/or kraut. Served with a juicy wedge of watermelon and a tall glass of lemonade or iced tea with mint. I'm a simple girl.
I also like smokey, messy fall off the bone ribs with barbecue sauce. Serve it with some cool, crispy cole slaw and a nice little pile of baked beans and I'm pretty pleased.
And then there is barbecue chicken with a giant salad and fresh grilled corn on the cob.

My mother makes the most delicious cold pasta dish. Basically what you top a bruschetta with over penne--all cold--so refreshing.
I also love a cold bean salad, vegtable salad.
Good old hot dogs and hamburgers are probably my fav though--oh with a cold beer or mixed drink

A meal that I really miss : my mom's blueberry pancakes for dinner when blueberries were in season.
She never wrote her pancake recipe down and I cannot replicate it, no matter what I try.
During blueberry and strawberry season, we would also have a very light meal (wurst, cole slaw and potato salad) followed by vanilla pudding topped with fruit.

I saw a recipe that looked appetizing for a shrimp cobb salad. Boiled and chilled shrimp, avocado, bacon, lettuce and tomato with a lemon herb dressing
