Escarole Soup(aka Italian wedding soup)
Ingredients:
3 sausages
1 Can of chicken Broth
4 heads of escarole well washed
1 can of progresso cannellini beans
Some salt
Directions
Cut up Sausagesinto bit sizepiecesand brown in Pressurepot.once Browned add chickenbroth,washed escaroleand beans.Fill Pressure pot with water almostto top(leaveabout 1 inch).Put Top onand cook on highflame for 10 Minutes once Pressure pot shaker starts shaking(It takes a while for shaker to shake).Make sure to allow Pressure to go downbefore opening pot.
You can add pasta or Rice when serving.
Grated cheese goes nice too.
