i have an awesome recipe for escarole and beans- its my personal recipe - all recipes gave it 5 stars-
but it does not include sausage- so i suggest you slice thin and cook the sausage in a pan first, then place into the escarole when its done cooking
you can see i placed grilled chicken on top so wh not use suasage?
