Cooking for large crowd?

So for DS's first birthday, we are cooking a few dishes ourselves. I already have volunteers for some, so now DH and I are left with two... sausage & peppers, and penne a la vodka. First, I've never made sausage and peppers...anyone have any good ideas for it? I have the general idea, and I will be baking it. I googed it LOL.
And, for the penne...how much should I get? I plan on making a full tray. Do you think 4 boxes or bags will be good? I I just never made such large quantities... HA. I don't want to skimp out on anything. LOL

dont have any recipes but...For a sit-down dinner, a pound of pasta will serve 4-6 and for a buffet style 8-10.... hope that helps some.

sauage and peppers is sooo easy... but i don't bake it, i do it on the stove. you can do it a day or 2 before tho and re-heat in oven before you put it on sternos!

Everyone cuts their sausage different... I like to do diagonal slices. So you need sweet or hot italian sausage. Brown in EVOO on the stove, one cooked removed from pan and in the dripping left you want to sautee up the peppers and onions, with som black pepper too... sometimes i add a pinch of italian seasoning. Once those are golden brown marry them with the sauage a nd let them cook for a bit. transfer to the tray until you are ready to re-heat and serve!

p.s. I like to use a mix of red and green peppers... so it looks pretty!

This is how I make my sausage and peppers too. And you can definitely do it a day before.

Thanks so much for the replies!! Sounds easy enough! I'm just nervous on the amount to buy. One site I found said 12lbs of sausage, and 8 lbs of peppers...does that sound normal? lol.
